I understand I can pick a selection in Excel, use a background/fill shade and it functions, not on Google Sheets. How have the right to it be done?

Go to borders select

"All Borders" then go to "Border Color"

and also choose white shade.

To turn off visible gridlines in the entirety sheet, tbelow is a menu option: View - Gridlines.

If you intend the borders around cells, like this:

there is the "Border" symbol, as checked out in the photo over.

If you intend to fill in a colour, in a range of cells, there is the "paint bucket" symbol, simply to the left of the Borders icon, as checked out in the facility here:
